Slow Cooker Thai Chicken with Peanut Sauce
I love the ease of slow cookers but I’m not usually a fan of the taste… if cooked too long the veggies turn to mush and the meat can be dry. (My husband however LOVES crockpot meals.) Overall though, I’ve had pretty good luck with most Asian inspired meals. This picture had me salivating and at the time of this post, it’s been pinned over 420,000 times!

It’s a slow cooker recipe so it was extremely easy to put together. There aren’t any veggies to cut and the chicken doesn’t need to be seared so you pretty much dump it all in the crockpot and you’re done. It smelled WONDERFUL cooking all day. There are a lot of flavors going on but they work well together… coconut milk, peanut butter, lime juice, honey, soy sauce… yummy. I didn’t have any noodles so I served it over rice with a side of roasted broccoli and mandarin oranges. I omitted the red pepper because… kids. BUT, my husband and I just added it to our portions at the table. We also added more salt and pepper. The aroma was so flavorful but the taste didn’t match. It didn’t taste bad… it just didn’t seem to taste as “full” as it smelled.
My seven year old thought it was “ok”.
My one year old ate the rice around the chicken.
The leftovers sat in the fridge for 2 days before we ate the rest and when we did… WHOA. It was delicious! Those flavors that smelled so wonderful matched the taste! We devoured it all. My seven year old loved it… my one year old still wouldn’t try it but she doesn’t like to eat anything other than chips and blueberries.
Next time we make this (and there will DEFINITELY be a next time) my husband wants me to add a little curry (<— YES) and we both would like to top it with Sriracha sauce.
